What can I expect?

Well I finally have theroblem solved on why I burned off 2 fish already, came down to two things.
1- Nutri-life sea water is Very high in Salinity, it has to be diluted (dear god, buy a hydrometer)
2 - My LPS wasn't giving me the right information or helping with testing my water, even though they have nice fish and critters, I'm going to the other guy who went the extra step.
(enough ranting)

So I have my inverted in the cycled tank, all is well, but I noticed my Ammo is coming up, is this a start of another cycle?, will the crabs be safe? What can I expect next?
My reading tonight was around a point five Ammo, salinity is 1.021, and no other readings, pH is right around the 8.

Yes, that sounds like the start of your cycle. Your inverts probably won't make it through the cycle. (don't add anything else until the cycle is complete).

At the end of your cycle:
Your salinity should be at 1.024-1.026.
Ammonia and Nitrites should be 0.
Nitrates should be less than 20ppm with a goal of 0.

So if the little crabs are not going to make it, how will I know they're gone?

You won't see them out and about anymore, or you will just see their empty shells.
